Holy Guacamole!

The Superbowl is ruining TV, there is nothing else worth watching.

This morning I got in time to go to church B had a different idea in mind that involved sleeping in. Oh a whim I decided to give savory oats a try after seeing them on The Great Balancing Act.IMG_00441/3 c oats, 1/3 c milk, 1/3 c milk, salt, 1 egg whisked in, shredded cheddar cheese, and diced deli ham.

It looked really good but I did not like it at all. I am not an egg fan and this was really egg-y.  Not for me. I only ate about 1/4 before giving up on it.

Then I moved onto a bagel.

IMG_0050Costco parmesan cheese bagel with onion and chive cream cheese. This was really good but I got full after eating about 2/3 of it.

I feel like I wasted so much food this morning and I can’t stand that!

B and I spent the morning running some errands. I love it when he goes with me since I am much less likely to spend money of frivolous stuff. I really could use some new clothes, but I am going to hold off for now. The shape of my body seems to be changing since I have been eating better and working out. I am not losing weight but my pants have been fitting looser lately. Maybe I will be able to it back into my old clothes soon!

Lunch was ahi tuna tacos.

IMG_0051La Tortilla Factory tortilla, ahi tuna, spinach, leftover shrimp, shredded cheddar cheese, Jack’s Special salsa, Oikos plain Greek Yogurt, and sliced jalapenos.

IMG_0056 B wasn’t a big fan but I loved it. There was another tuna steak leftover that will likely be making an appearance in tomorrows lunch. Any ideas?

Somehow the afternoon managed to get away from me while I was going some baking. I am not sure what got into me!

I started with some Ultimate Cookies that I saw on Iowa Girl Eats.

IMG_0060This recipe caught my eye because it has chocolate chips, butterscotch chips, and toffee chips. IMG_0063I only made a half recipe and then still froze some of the dough. I let them get a little crunchier than I wanted, but they will still be perfect for dipping in milk. I am going to have to start remembering to use the oven timer!

After the cookies I decided to make some cupcakes. I have some store-bought frosting in my fridge that I want to use up, plus I was thinking of making my coworkers some sort of baked treat for Valentine’s day. Two birds with one stone.  IMG_0064I loaded all of the (mini) cupcakes in my Cupcake Courier. This will be the first time I have used it! I love how it holds so many.

I wanted to make some carrot cake bars but I decided this was enough baked goods for tonight.

After cupcakes it was time for dinner. Whew. In honor of the Superbowl nachos were on the menu.

IMG_0066 I started with some Tostito’s Multigrain tortilla chips.

IMG_0067Then I dolloped on some refried beans. I wish I had spread these out a little more.  IMG_0068Then topped with shredded cheddar cheese.

While all of these were getting all melt-y in the oven B was whipping up some homemade guacamole with the organic avocados from this past weeks produce delivery.

IMG_0070 2 avocados, 1/4 large red onion, tomato, garlic powder.

I am not usually a guac fan but this was fantastic.

IMG_0074After the nachos came out of the oven we topped with tomatoes, salsa, Greek yogurt, and slice jalapenos. And we ate the entire dish full. The only thing that would have made these better would have been olives.  IMG_0076Since I tasted tested my baked goods earlier on the day and am now feeling a little sugared out I stuck with a clementine for dessert.

Time to start getting ready for work tomorrow. There is quite a bit of laundry on my bed that has to be folded before I can get in it tonight. The weekend is always gone too soon.

    I know, I missed my Sunday night shows tonight! The Superbowl did ruin it ;)

    At least it was only 1 Sunday out of the year. I ended up watching pat of The Sound of Music. How about you?

    I’m the opposite. I lurves me some football! I am sad now that there is nothing for months! That bagel is yummy – one of my favorite breakfasts :D

    I tried savory oats as well and kind of liked them, but would rather just have my regular oats.

    My husband wishes I was one of those girls who likes football. I don’t usually mind it because it is time that the hubby is occupied, but when there is nothing else on to watch it is a bore. I guess it was a good time for a book!
