Today has been surprisingly good for a Monday and even included a trip to the dentist.</p>
<p>I started my day out strong by getting up early for a workout. I decided to use a <a href="http://www.yogadownload.com">YogaDowload.com</a> pose guide since my knee was hurting. I really need to work on my stretching. I think I ma going to look into getting some more of these workouts.</p>
<p>Next up was Oats in a Jar!</p>
<p><a href="http://dont-forget-dessert.com/wp-content/uploads/2010/02/Blog0021.jpg"><img style="border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px" title="Blog 002" border="0" alt="Blog 002" src="http://dont-forget-dessert.com/wp-content/uploads/2010/02/Blog002_thumb1.jpg" width="364" height="484" /></a>The jar of deliciousness included 1/2 apple, 1/3 c oats, 1/3 c milk, 1/3 c water, salt, cinnamon, 1 tbsp flax, 1 tbsp chia seeds, and 2 tbsp wheat berries. Plus I topped with 1/2 an Ultimate cookie that I crumbled on top.</p>
<p>There was so much in this little jar that I could not finished it all.</p>
<p>Since I knew I would be eating lunch early I tried to keep my morning snack kind of light. I started with some tiny pickles.</p>

I just forget about them sometimes.</p>
<p>Plus a really big carrot.</p>

All of a sudden it was time for me to heat up my lunch and hit the road to head to a dentist appointment. I was actually running a little late thanks to an impromptu conference call that caught me off guard.</p>
<p>In preparation for my busy lunch I packed some food for the road. Unfortunately it wasn’t particularly travel friendly.</p>
<p><a href="http://dont-forget-dessert.com/wp-content/uploads/2010/02/Blog015.jpg"><img style="border-bottom: 0px; border-left: 0px; display: block; float: none; margin-left: auto; border-top: 0px; margin-right: auto; border-right: 0px" title="Blog 015" border="0" alt="Blog 015" src="http://dont-forget-dessert.com/wp-content/uploads/2010/02/Blog015_thumb.jpg" width="533" height="401" /></a>It is not the easiest thing to drive down the interstate with a plate of tuna and Brussels sprouts sitting in your lap. I somehow managed to get to the dentist almost on time with all my food in my belly and none on my clothes (not that I have noticed yet).</p>
<p>I sautéed these Brussels sprouts and onion in balsamic vinegar this morning while making my oats. I was not a huge fan. I like them better with bacon. </p>
<p>Once I got back to the office I treated myself to a cookie.</p>

<p>Onto food.</p>
<p>I was so excited for breakfast this morning because it was a morning for a few firsts. Since I made some cookies yesterday evening I finally had an empty PB jar. You know what that means! OIAJ (for those of you who don’t know, Oats In A Jar)!!!!!</p>
<p><a href="http://dont-forget-dessert.com/wp-content/uploads/2010/02/020110Breakfast2.jpg"><img title="020110 Breakfast 2" style="border-top-width: 0px; display: block; border-left-width: 0px; float: none; border-bottom-width: 0px; margin-left: auto; margin-right: auto; border-right-width: 0px" height="484" alt="020110 Breakfast 2" src="http://dont-forget-dessert.com/wp-content/uploads/2010/02/020110Breakfast2_thumb.jpg" width="364" border="0" /></a>this was 1/2 c oats, 1 c water, a splash of milk, cinnamon, flax seed, agave, vanilla extract, and wheat berries (another first).</p>
<p>I love the chewy factor added by the wheat berries.</p>
<p>I also topped with some Nature’s Path granola and slice strawberries. I ate about 5 more strawberries than was pictured here.</p>
<p>There was so much oatmeal that I could not finish the jar but I definitely got 3/4 of the way through it. I stayed stuffed all morning.</p>
<p>I didn’t get hungry for lunch until noon. but when I got hungry I got <em><strong>really</strong></em> hungry. I even left for lunch a few minutes early because I just couldn’t wait.</p>
<p>I had plans for lunch. I was going to eat leftover udon noodles with some shredded, boiled chicken, chicken broth, and teriyaki sauce. Unfortunately a certain husband ate the chicken and I was protein-less and uninspired.</p>
<p>I tried to make the udon dish minus the noodles.</p>

<p>It only tasted ok. I think the noodles were a little to old so I pitched it after a couple of bites.</p>
<p>I also made a repeat of last night dinner because it sounded tasty and was quick and easy.</p>

<p>Between this open faced sandwich and the noodles my lunch was carb-o-licious.</p>

This is bowl #3 of the bowls I bought the other weekend in Fayetteville. I love their size.</p>
<p>After I scarfed down the green beans I rinsed my bowl and went back for dessert. <a href="http://dont-forget-dessert.com/wp-content/uploads/2010/02/020110Lunchdessert.jpg"><img title="020110 Lunch dessert" style="border-top-width: 0px; display: block; border-left-width: 0px; float: none; border-bottom-width: 0px; margin-left: auto; margin-right: auto; border-right-width: 0px" height="422" alt="020110 Lunch dessert" src="http://dont-forget-dessert.com/wp-content/uploads/2010/02/020110Lunchdessert_thumb.jpg" width="561" border="0" /></a> Girl Scout Cookie Ice Cream!!!! Samoas to be specific. Can you believe it is that time of year again? This stuff is creamy and coconutty. Love It.</p>
<p>So has anyone else out there ever done a radio interview? St. Jude’s Charlotte fundraising branch is having a radiothon and asked if I wanted to share some of my experiences in support. I am such a chicken I totally flaked out.</p>
<p>Don’t get me wrong, I never committed to doing it, because I am a chicken, and I have had a busy day. But I feel like I could have made more of an effort to make time to do it. I really want to support the hospital and this would have been an easy way to do it.</p>
<p>I just have never really shared my experience with others and am not sure how to go about it. I didn’t really know if I wanted to figure it out live on the air with a local radio station. Maybe I will have more courage tomorrow?</p>
